ONE OF THE PILLARS OF THE ATXURI RESTAURANT FROM THE VERY BEGINNING HAS BEEN THE CARE AND RESPECT FOR THE ESSENCE OF THE RAW MATERIALS WE USE IN THE PREPARATION OF OUR RECIPES.

WE RESPECT. The primary flavour of our ANTXOAS CLEANED BY HAND by our kitchen staff, the texture and freshness of the PINTXO HAKE, both products of the Cantabrian Sea.

WE CARE. May the recipes of yesteryear endure over time, such as the desalination of Icelandic cod, which is mellow, juicy and full-bodied.

WE DEMAND. The best guarantees of traceability of all the products we use, being responsible with the environment that surrounds us, the Bay of Cadiz and the Cadiz coastline, and the species that live there and bring us so much joy, with incomparable flavours such as sea bass or sea bream.
